We buy bigger pods. Grade-A Extra Fancy JUMBO GRADE, its the best out there. That means you get more seeds, more seeds more flavor.

Is greener better? Not necessarily, since picking them prior to full maturity is ideal, getting them too green means they might be a bit too ripe. Slightly off green is best.

Small Green Cardamom

Inferior quality, Small pod, less seeds. Probably picked a little too early not allowing them to reach 3/4 maturity for optimal flavor.

Medium Green Cardamom

Good quality, larger pod, more seeds.

Jumbo (Rani) Green Cardamom

Rani Premium quality, largest pod, most amount of seeds. In the Cardamom trade this is called Fancy Green Jumbo (XL) Picked at 3/4 maturity for the best possible flavor & optimal moisture for seeds. (This is what you are buying with Rani)
