I love it... the people, the pace, the challenge. Still do. But I used to get sick all the time. Constantly run down. The kind of tired that a weekend doesn't fix. Yesterday Salterbaxter Lead Consultant, Tess Ariotti, sat down with IAB Australia CEO, Gai Le Roy, for a candid discussion as part of Ad Net Zero Australia’s first in-person Sydney Supporters Forum. Speaking before a room of media, marketing and communications professionals, Tess and Gai offered a big picture look at what’s happening in climate action, both at global and Australian levels, and discussed the implications for the industry and broader business. The pair highlighted the acceleration in progress, as efforts towards decarbonisation continue to build, and how collaboration through initiatives like Ad Net Zero is resulting in bigger, smarter change. Those present were urged to refine their approach to communicate with clarity among their teams and consider their individual business needs and capabilities. All were encouraged to be strategic about where to act to protect and create the most value of their distinct organisations.

Just wrapped a session with a great Melbourne hospo venue, showing how Liven Loyalty, Ordering, and POS work together as one ecosystem. Most operators understand growth theory - but execution is tougher. Transactions don’t grow without loyal guests. And today, data-driven loyalty is essential: the guest journey is more fragile and valuable than ever. Here's what I took them through: First-time guest retention is invisible for most venues. Over 70% of new guests never return—only 30% convert to a second visit. The hard truth? Brands spend big on ads, but most investments disappear after one meal. A modest 5% lift in retention can boost profitability by up to 95%, yet most venues spend 5-7x more acquiring new customers than keeping existing ones. Regulars power the flywheel. Between 60% and 80% of restaurant revenue comes from repeat guests—not one-off visitors. The top 20% drive about 60% of all transactions, but half aren’t enrolled in your loyalty program or in your CRM. That’s hidden value right in front of you. Marketplace guests don’t belong to your venue. Aggregators own the transaction, the relationship, and the data. At best, those guests are strangers; at worst, you’re funding someone else’s loyalty engine. If you stop paying for visibility, your guests are redirected to competitors. How do you change the equation? Identify what is causing diners to become regulars - it is menu items, time of day offers, bonus dollars?
